My 2004 Mercedes Benz E500 Instrument cluster middle display won't work. I Was wondering how to take the instrument cluster apart and change the bulb if there is one?

The older E Class W210 had bulbs that you could easily replace. That would fix the problem you describe. On the W211 the bulbs are not easy to access from the back as shown in this picture.

You can use a third party company that will repair your exsiting cluster. It is way cheaper than getting a new cluster at the dealer.

The following video shows you how to remove the instrument cluster.
